Super Tasty Summer Zucchini Skillet

Looking for a yummy, easy, and veggie-filled meal? This one-skillet recipe checks all the boxes! Plus, with a total cook time of roughly 35 minutes and very little clean-up, this is sure to be one of your go-to summer meals.

The star of this dish is zucchini, but it also includes tomatoes, mushrooms, onions, squash, black olives, garlic, cheese, and ground beef. Check out the beautiful rainbow of colors below!

Ingredients
1 lb. lean ground beef
1 medium red onion, diced
1 (14.5 ounce) can stewed tomatoes
1 (8 ounce) package of white mushrooms, sliced
1 (6.5 ounce) can tomato sauce
1 can black olives, sliced
1 clove garlic, minced
1 cup cherry tomatoes, halved
3 medium zucchini
1 medium squash
1 (8 ounce) package of cheddar cheese
Salt and pepper to taste
Cilantro (optional garnish)
Directions
In a large skillet, cook ground beef and onion until meat is no longer pink. Drain grease.
Add stewed tomatoes to skillet and crush to create smaller pieces. Stir in mushrooms, tomato sauce, black olives, garlic, cherry tomatoes, salt, and pepper. Let simmer for about 20 minutes until liquid reduces.
Slice zucchini and squash lengthwise and then crosswise into 1/2 inch slices. Add to skillet. Cover and cook for about 7 minutes until tender.
Stir in cheese. Cover and cook for about 3 minutes.
Serve with cilantro on top. Enjoy!

Notes
The recipe calls for 1- 8 ounce package of cheddar cheese. However, this dish is still incredibly tasty if you reduce it to only 4 ounces.
