Refreshing Cucumber Smoothie

It's cucumber season! Cucumbers are roughly 96% water, low in calories, and contain Vitamin K, which promotes good bone health. Additionally, they have fiber, Vitamin C, potassium, and more. If you want a hydrating, refreshing, and tasty smoothie ingredient, try the cucumber.


While the cucumber is the star of this smoothie, other ingredients I used included frozen pineapple and mango, banana, spinach leaves, yogurt, and milk. Yum!

Cucumber Smoothie

Ingredients

  • 1 cup chopped cucumber, peeled (or, for higher fiber, do not peel)

  • 1/2 cup frozen pineapple chunks

  • 1/2 cup frozen mango chunks

  • 1 banana, sliced

  • 1 cup fresh spinach

  • 1/2 cup Greek yogurt

  • 1/2 cup milk or almond milk

  • 1 handful of ice, cubed

Directions

Place ingredients in a blender with ice and frozen fruit at the bottom. Blend until desired consistency, pausing to stir if needed. Enjoy!
