Nutrient-Filled Chia Seed Pudding

Chia seeds are a plant-based protein that contains amino acids, antioxidants, healthy omega-3 fatty acids, and fiber. Plus, they have minerals such as iron, magnesium, calcium, and zinc. Despite their tiny size, they deliver a ton of nutrients! Due to their fiber, they leave you feeling fuller for longer and have been linked to improved digestion.


When mixed with liquid, chia seeds turn into a gel-like substance, which makes them a fantastic base for pudding. Check out my super easy recipe below.



Pictured: I topped my pudding with homemade blueberry compote and granola. Delicious!


Chia Seed Pudding


Ingredients

1 cup milk (or almond milk)

2-3 tablespoons chia seeds

2 tsp maple syrup

1/4 cup oats


Directions

Combine milk, chia seeds, oats, and syrup and stir. Let it sit out for 5-10 minutes, and then whisk until all clumps are gone.


Pour into mason jars (or small containers) and refrigerate overnight.


Before serving, top with your favorite berries, compote, jam, yogurt, granola, nuts, or any other toppings you enjoy.
