Healthier Compotes... from the Totally Unofficial "Compote Queen"

Lately, I have been obsessed with compotes, hence the title. Perhaps it is the yummy smell of the warm fruit or the soothing process of stirring a simmering fruit mixture on the stove. Although many recipes call for tons of added sugar (like cups of sugar), I have found a few ways to reduce this. Also, as with anything, a little bit goes a long way.


I personally love creating parfaits or adding compotes to overnight oats or chia seed pudding, but they are also really tasty on pancakes or French toast. Other ideas for compotes include serving it as a side on a cheese plate, on top of pork chop, or as a topping on cheesecake.


Here is a collection of some of the recent compotes. Be sure to check out the Blueberry and Strawberry Parfait at the bottom. If you are looking for a red, white, and blue dessert, these are cute and healthy!


Strawberry Compote Parfait

Strawberry Compote


Ingredients:

1 lb. fresh strawberries, hulled and sliced lengthwise

2 tablespoons sugar (or substitute for honey or maple syrup)

1 tablespoon lemon juice


Mix ingredients in a saucepan and cook over medium heat for 10 minutes, stirring continuously. Let cool.


I served this yumminess with Greek yogurt and granola for breakfast.



Blueberry Compote


Blueberry Compote


Ingredients:

2 cups fresh blueberries

1/4 cup maple syrup

2 tablespoons water

1 tablespoon lemon juice

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon


Mix ingredients in a saucepan and cook over medium heat for 10 minutes, stirring continuously. Let cool.


I added this, along with granola, to chia seed pudding. CLICK HERE for the recipe.


Apple Compote Parfait

Apple Compote


Ingredients:

2 apples, peeled and diced

2 tablespoons light brown sugar

1 1/2 tablespoons lemon juice

1/2 teaspoon cinnamon


Combine ingredients in a saucepan and stir over medium heat for 15 minutes. Add a little water if needed. Cool.


Shown with Greek yogurt and granola.



Blueberry and Strawberry Compote Parfait


Blueberry and Strawberry Parfait

This is an awesome dessert for the Fourth of July or Memorial Day. Simply make strawberry compote and blueberry compote (recipes are listed above). I had two saucepans going simultaneously to save time. Once cooled, add strawberry compote to a glass (I have found martini glasses work best). Add a layer of Greek yogurt. Then, add a layer of blueberry compote. Top with granola or nuts. This red, white, and blue dessert is super cute and healthy!! Enjoy!
